Meadowsweet is also known as Queen of the Meadow because it's generally found growing in damp meadows and was a main ingredient in the European honey-wine drink known as mead.
Flavours from the flowers are reminiscent of hay, almond and vanilla.
Use:
Perfect to mix in waffle or pancake batter. Infuse in hot milk or cream and use as a base for custards, rice puddings, ice cream and panna cotta. Mix into herbal teas, sprinkle into syrups and cordials.
